Cashew and pumpkin seed bar

I am not a cook, and I’m definitely not a baker – but sometimes you just happen to make something delicious and you just want to share it with everyone!

The other week I thought I’d make some “healthy” bars to help me through long days at work, and also something that is beneficially for my body. This bar contains heaps of healthy fats which are good for the skin, hormones and for the brain!

Makes about 10 bars:

Ingredients:
2 cups cashews
2 cups oats
1 cup pumpkin seeds
15 soaked pitted dates
2 tbsp raw cacao
2 tbsp extra virgin coconut oil
Maybe a little bit of water – depending on the consistency
A pinch of salt
A hell of a lot cashew butter (LOVE IT!)

The “how to”:

  • Put the oats and cashews in a blender and blend until flower
  • Add the pumpkin seeds – blend
  • Add the soaked dates – blend
  • Melt the coconut oil if it is solid and pour it into the mix along with the cacao
  • Add salt and blend it to a sticky (but not too sticky consistency) – this is where the water would be added if it’s needed
  • Spread half of the batch out on in a pan (smaller pan) on a parchment paper, make it a thin layer and then add a thing layer of cashew butter and then spread on the other half of the batch
  • Pop it in the fridge for a couple of hours, cut it up in desired pieces and then enjoy!
